Abstract: PURPOSE:To obtain the title hydrolyzed product useful for foods, etc., having low salt content, good emulsifiability, foamability and taste by partially hydrolyzing a protein in an alkaline aqueous solution, feeding into a central divided room in an electrolytic cell separated with cation-exchange membranes, charging with electricity, neutralizing and desalting. CONSTITUTION:A protein is partially hydrolyzed in an aqueous solution under an alkaline condition, the resultant alkaline protein solution is fed into a central divided room 7 in an electrolytic cell 1 comprising at least a cathode room 8, an anode room 6 and the central divided room 7 set between both the rooms and separated therefrom by plural cation-exchange membranes 2, 3, then an electrolytic aqueous solution is fed into the cathode room 8, an electrolytic aqueous solution containing proton is fed into the anode room 6, the electrolytic cell 1 is charged with electricity and proton is sent from the anode room 6 through the cation-exchange membrane 3 into the central room 7 and the alkaline protein solution is neutralized, and at the same time, inorganic cation therein is excluded to the cathode room 8 through the cation-exchange membrane 2 to give the aimed partially hydrolyzed product of protein.

Abstract: PURPOSE:To efficiently change and control the valency of an aq. metal ion soln. by using a fluorine anion-exchange membrane having a specified structure produced by applying treatment with an acid or a base. CONSTITUTION:The valency of an aq. soln. of a metal ion capable of forming plural oxidation states is changed and controlled by anion-exchange membrane electrolysis. A membrane formed from a copolymer consisting of a repeating unit shown by the formula is treated with an acid or a base, and an anion- exchange group is introduced into the copolymer to obtain a fluorine carboxylic ester membrane which is used as the anion-exchange membrane in this case. In the formula, X is F or CF2, (l) is 0 or 1-5, (m) is 0 or 1, (n) is 1-5, p/q is 4-16, and R is an alkyl. Since the anion-exchange membrane has excellent durability and a metal ion is not leaked, the membrane is applicable to various processes, and the valency of the metal ion can be efficiently changed and controlled.

The anion exchange groups are quat. ammonium groups represented by formula II (where each of R1-R3 is lower alkyl, R1 and R2 may bond to each other to form a tetra-or pentamethylene chain and Z is a halogen anion, BF4 , SbCl6 or the like).

The exchange capacity of the fluorine-contg. anion exchange membrane is regulated to about 0.1-3.0meq/g dry resin and the thickness to about 40-500mu.

In this production device, the cation-exchange membrane is fixed to one side of the anode 21 on the cathode 25 side, and the other side of the anode 21 is brought into contact with water 27, namely, the water 27, anode 21, cation-exchange membrane 23, aq. alkaline soln. 24, cathode 25 consisting of a gas diffuser electrode, and oxygen 26 are successively arranged in the electrolytic cell, and a mixture of the hydrogen peroxide of an alkali metal and hydrogen peroxide is produced by using the cell. By this method, the cell voltage is remarkably lowered, and the current density can be increased.
