Abstract: Water-soluble protein hydrolyzates and high-amylose starches provide an improved whipping system for aerated confections such as nougats, grained marshmallow, etc. The total whipping agent and sweetening agent requirements may be sterilized and aerated to a specific gravity of 0.75 or less. The high-amylose starches and protein hydrolyzates are film-formers and provide a supportive matrix for the aerated confections. The aerated confection permits the use of a broad range of sweetening agents without necessarily relying upon crystallized sugars for textural properties. High, moisture-containing, aerated confections with improved stability against moisture-loss may be obtained by substituting crystallizable sugars (e.g. sucrose) with sweetening agents which have a higher degree of humectancy.

Abstract: Esta invención se refiere a acrilamidas de almidón que contienen grupos acrilamida cologantes polimerizables. Las propiedades hidrófilas o hidrófobas del almidón pueden ser alteradas o modificadas por los grupos acrilamida o por el tipo de la cadena de almidón. Las acrilamidas de almidón pueden ser homopolimerizadas o copolimerizadas con otros monómeros etilénicamente insaturados así como con otros reactivos reticulantes para obtener artículos configurados o revestimientos flexibles transparentes y resistentes al agua. Los hidrolizados de acrilamida de almidón hidrófilos se dispersan fácilmente en el agua a un elevado nivel de sólidos para formar pastas de pequeña viscosidad que pueden ser utilizadas como vehículo para preparar revestimientos a base de almidón, flexibles e insolubles en agua. Las acrilamidas de almidón pueden ser preparadas por eterificación de un almidón con N-metilolacrilamidas en presencia de un catalizador ácido y de un inhibidor de la polimerización.

Abstract: 1517935 Starch-based concentrates; cocoa A E STALEY MFG CO 30 Oct 1975 [20 Jan 1975] 44894/75 Heading A2B [Also in Division C3] A food product which contains starch and substantially all of the desired recipe solids to prepare a directly consumable food product upon hydration of the food product with water in which the food product is in the form of a concentrate comprises (a) a starch phase of birefringent, cold-water swelling starch granules exhibiting a loss of birefringency within 10 minutes when 1% by weight of the cold-water swelling starch is dispersed in water at a temperature of less than 120F, and (b) a continuous aqueous phase of an aqueous dispersant comprising water and a starch swelling inhibitor with the starch granules of the internal phase being homogeneously dispersed and suspended within the continuous external phase in the preparation of one part by weight of water per six parts by weight starch granules the preparations being such that the starch present is inhibited from swelling in the concentrate. The preferred cold-water swelling starch is hydroxypropyl starch of DS greater than 0.1 e.g. 0.15-0.5. In the Examples a liquid orange pudding is prepared from a concentrate comprising sucrose, orange juice concentrate and a coldwater swelling hydroxypropylated starch by admixing at room temperature with water whereupon the mixture sets to a gel. A liquid vanilla pudding concentrate comprises sugar, water, cold-water swelling hydroxypropylated starch derivative, tetrasodium pyrophosphate hydrate, disodium phosphate and vanilla flavouring and similar concentrates are prepared based on instant chicken bouillon solids, instant beef bouillon solids (gravy concentrates) and cocoa (chocolate milk).

Abstract: The invention relates to starch acrylamides containing polymerizable pendant acrylamide groups. The hydrophilic or hydrophobic properties of the starch can be altered or modified by the acrylamide groups or the type of starch chain. The starch acrylamides can be homopolymerized or copolymerized with other ethylenically unsaturated monomers as well as other cross-linking reagents to provide water-resistant, clear, flexible coatings or shaped articles. The hydrophilic starch acrylamide hydrolyzates herein readily disperse into water at a high solids level to provide low-viscosity pastes which may be used as a vehicle to prepare flexible, water-insoluble starch-based coatings. The starch acrylamides may be prepared by etherifying a starch with N-methylol acrylamides in the presence of an acid catalyst and a polymerization inhibitor.
