A method of warewashing for the removal of starch is described herein. The method includes applying an alkaline composition to a dish, then applying an acidic composition to a dish, and then applying a second alkaline composition to the dish. The method may include additional steps. Compositions for using with the method are also disclosed. Finally, dish machines that may be used in accordance with the method are disclosed.

The present invention refers to multi-phase tablet for use in a washing machine and/or dishwasher, the tablet comprises at least three phases, whereby a) the first phase comprises an alkalizing agent, whereby the amount of alkalizing agent is sufficient to obtain a washing liquid having a pH-value of 7,5 or more (20°C), b) the second phase comprises an acidifying agent, whereby the amount of acidifying agent is sufficient to obtain a washing liquid having a pH-value of 6,5 or less (20°C), and c) the third phase comprises an alkalizing agent, whereby the amount of alkalizing agent is sufficient to obtain a washing liquid having a pH-value of 7,5 or more (20°C) and to a process of cleaning articles.

The process of continuous machine dishwashing, which can be carried out in single-tank or multi-tank machines, is improved by the machine-operated process disclosed. This is achieved, in particular, by treatment of the tableware at least in one process step with an acidic cleaning solution and in another process step with an alkaline cleaning solution, comprising the steps of: a) applying an acidic aqueous cleaning solution to the at least partly soiled tableware and b) removing the acidic aqueous solution and the soil in one or more following steps, the at least one alkaline treatment taking place before and/or after the acidic treatment and the alkaline and at least acidic aqueous cleaning solution at least partially neutralizing one another.

The invention relates to alkaline detergent pastes comprising a complexing agent, as used, in particular, industrially, for the cleaning of crockery and plant and equipment in the food industry and also for washing textiles. The invention further relates to method for the production of creme-like, strongly alkaline aqueous detergents, which contain an organic complexing agent displaying at least one carboxylic acid function, the use of detergents produced by said method and particular embodiments of said detergent.

The invention concerns a method for cleaning articles in a dish washing machine comprising an alkaline and an acidic cleaning step and at least one additional alkaline cleaning step, characterized in that a) in a hood dish washing machine there is a first alkaline cleaning step with an aqueous cleaning solution having a pH-value higher than 9, b) the first alkaline cleaning step is followed by a first acidic cleaning step with an aqueous cleaning solution having a pH-value lower than 5. c) the first acidic cleaning step is followed by at least a second alkaline cleaning step with an aqueous cleaning solution having a pH-value higher than 9.
