    Abstract: PURPOSE: Rapidly fermented soybean paste including codonopsis lanceolata, and a producing method thereof are provided to prevent the loss of nutrients during producing processes. CONSTITUTION: A producing method of rapidly fermented soybean paste including codonopsis lanceolata comprises the following steps: steaming soybeans, and inserting codonopsis lanceolata powder into the steamed soybeans; injecting fermentation bacterial into the steamed soybean mixture, and adding salt into the mixture; and aging and fermenting the mixture. The codonopsis lanceolata powder is obtained by hot air drying codonopsis lanceolata at 45-70 deg C, and crushing.
