    Abstract: PURPOSE: A method for non-destructively measuring the protein content of white rice state from high moisture brown rice using near infrared spectrometer is provided to estimate the protein content of white rice state from high moisture brown rice without passing the drying and polishing processes of a brown rice. CONSTITUTION: A method for non-destructively measuring the protein content of white rice state from high moisture brown rice using near infrared spectrometer is same like next. A near-infrared spectrum around wavelength of 570~1100nm is obtained from the high moisture brown rice which is a standard sample. The calibration curve is set by drawing a measuring formula from the infrared spectrum using a regression analysis method. The moisture content of the high moisture brown rice is 18~27%. The measuring formula is drawn by using a regression analysis method.
