PURPOSE: Provided is a method for manufacturing fish bone powers and peptides which facilitate the absorption of calcium, thereby providing calcium and facilitating the absorption of calcium to be used as a row material for foods, beverages, pharmaceuticals and the like. CONSTITUTION: The manufacturing method comprises the steps of: reacting fish wastes, which are obtained from the process of making a fish filet, with enzyme extracted from the insides from a fish, such as a tuna and a mackerel; preparing fish bone powders containing rich calcium components from the reaction deposition; and preparing peptide components facilitating he absorption of calcium from the reaction supernatant.

PURPOSE: A low molecular weight phosphorylated chitosan oligosaccharide, its preparation method, and a mixture, pharmaceutical composition and food containing the chitosan oligosaccharide are provided, which chitosan oligosaccharide is used as a calcium absorption accelerating agent and is used to treat or prevent the osteoporosis. CONSTITUTION: The phosphorylated chitosan oligosaccharide uses water-soluble calcium extracted from the fish bone as a calcium source. The phosphorylated chitosan oligosaccharide is prepared by hydrolyzing chitosan to reduce the molecular weight and phosphorylating the chitosan.

PURPOSE: Chitosan oligosaccharide which has a degree of deacetylation of at least 75% or more and exhibits higher inhibiting activity against β-secretase is provided. The chitosan oligosaccharide has an excellent absorption rate in the body, it can be thus applied as material for prophylaxis and treatment of Alzheimer's disease. CONSTITUTION: Chitosan oligosaccharide which has a molecular weight of 10kDa or less and a degree of deacetylation of at least 75% or more is used as an inhibitor of β-secretase as Alzheimer's disease-inducing enzyme. A health supplementary food product, a food composition and a medical additive for the prevention and treatment of Alzheimer's disease contain 100% or less of chitosan oligosaccharide having a molecular weight of 10kDa or less.
