본 발명은 사과 유산균 발효능을 갖는 식품 유래 발효 균주를 동정하던 중 분리된 여러 균 중 락토바실러스 균이 항암활성을 갖는 것으로 알게 되어 본 발명에 이르게 된 것으로서 항암 활성을 갖는 기탁번호 KCCM11072P 락토바실러스 카제이( Latobacillus casei ) 및 이를 활성 성분으로 포함하여 의약품 내지 건강보조식품으로 사용될 수 있는 항암 활성 조성물을 제공한다.
Abstract:
PURPOSE: An antibacterial composition containing novel Lactobacillus strain with anticancer activity is provided to ensure effective anticancer effect to gastric cancer and colon cancer without side effect. CONSTITUTION: A Lactobacillus casei(deposit number KCCM11072P) has an anticancer activity. The strain is isolated during identification of food-derived fermentation bacteria. The anticancer composition contains the Lactobacillus casei strain as an active ingredient. The Lactobacillus casei strain is contained in probiotics or dead cells. The composition is a pharmaceutical product or supplementary health food.

Provided is a product comprising an apple base fermented with lactic acid bacteria, which maintains a high number of living bacteria, is freeze-dried stably so as to recover such a high number of living bacteria after thawing, and is useful for making foodstuff with excellent shelf life. The product comprising an apple base fermented with lactic acid bacteria is obtained by the method comprising the steps of: (a) diluting an apple base to a sugar content of 15 brix; (b) adjusting pH of the diluted apple base by using 1M dibasic sodium phosphate to 5.5-6.5; (c) sterilizing the resultant liquid; (d) cooling the dilution to room temperature and adding monobasic ammonium phosphate thereto in an amount of 0.025-0.2%(w/w); and (e) inoculating lactic acid bacteria into the resultant product and culturing the lactic acid bacteria for 24-48 hours.
