    Abstract: PURPOSE: An extraction method of wheat germ oil is provided to obtain high recovery rate and low production cost, to extract oil contained in wheat germ through an environment-friendly method, and to secure stability of antioxidant functional food. CONSTITUTION: An extraction method of wheat germ oil comprises: a step of preparing a dried wheat germ; a step of filling the wheat germ in an extractor; a step of contacting supercritical or subcritical carbon dioxide in an extractor(50) to contact to the wheat germ; a step of discharging the supercritical or subcritical carbon dioxide to outside; a step of releasing pressure and making the discharged wheat germ oil-containing supercritical or subcritical carbon dioxide flow into a classifier; and a step of collecting wheat germ oil which is separated from carbon dioxide in the classifier.
