    Abstract: 본 발명은 효소 가수분해를 이용한 유채박 유래 펙틴 생산방법에 관한 것으로, 유채박 분말을 대상으로 에탄올-벤젠 혼합액을 사용하여 유채박 지질 성분을 분리하는 탈지공정; 및 탈지된 유채박 분말을 대상으로 셀룰레이스 및 프로테아제를 이용한 효소 가수분해 공정으로 구성되는, 유채박 유래 펙틴 생산방법을 개시하고, 본 발명에 의하면, 유채박으로부터 펙틴을 생산할 수 있을 뿐 아니라 유채박은 초기 단백질 함량도 높기 때문에, 펙틴을 생산할 경우 추출공정 중 발생하는 부산물을 고단백질 원료서 재활용할 수 있는 이점을 가진다.

    Abstract: The present invention relates to a vegetable seed cake-derived pectin production method which uses an enzymatic hydrolysis. The disclosed vegetable seed cake-derived pectin production method comprises: a degreasing process for separating a vegetable seed cake lipid component by using an ethanol-alben mixture on vegetable seed cake powder; and an enzyme hydrolysis process for using a cellulose and a protease on the degreased vegetable seed cake powder. Thereby the present invention is able to recycle a byproduct which is generated from an extraction process as a raw material of high protein in case of producing a pectin since not only the pectin is produced from the vegetable seed cake but also the vegetable seed cake has a high content of initial protein.
