    Abstract: PURPOSE: A method for distinguishing frozen-thawed meat and refrigerated meat is provided to ensure simple and easy use without expensive equipment. CONSTITUTION: A composition for distinguishing frozen-thawed meat and refrigerated meat contains an antibody with respect to aspartate aminotransferase(AST) allozyme. AST allozyme is mitochondria AST. The meat is beef, pork, or chicken. A method for distinguishing frozen-thawed meat and refrigerated meat comprises: a step of preparing meat juice as a biological sample; and a step of performing electrophoresis of the meat juice to detect AST allozyme.
