    Abstract: A trehalose synthesizing fusion protein is provided to synthesize and hydrolyze maltooligosyltrehalose and increase the production efficiency of trehalose due to excellent heat-resistance. A maltooligosyltrehalose synthesis hydrolase(MhMTSHase) protein derived from Metallosphaera hakonesis(JCM8857) includes an amino acid sequence of SEQ ID : NO. 2. An MhMTSH gene encodes the MhMTSHase protein and includes a sequence of SEQ ID : NO. 1. A method for producing the protein comprises a step of culturing E. coli transformed by a recombinant vector including the MhMTSH gene. A method for producing trehalose comprises a step of adding substrate such as a water-soluble starch or a liquid corn starch to the MhMTSHase protein and then reacting it at a temperature of 65-75 deg.C under the pH of 5.0-6.0.
