    Abstract: PURPOSE: A method is provided to manufacture functional germinated brown rice by irradiating UV-A wavelength which is the specific wave of an environment-friendly LED. CONSTITUTION: After brown rice is sterilized, the brown rice is germinated by soaking the brown rice at 20-30°C for 18-30 hours in dark condition. The germinated brown rice is irradiated with a light emitting diode (LED) at 15-20°C for 5-10 days. An amino acid is one among threonine (Thr), valine (Val), methionine (Met), isoleucine (Ile), leucine (Leu) and phenyl (alanine (Phe) or tyrosine (Tyr)).

    Abstract: PURPOSE: A method of manufacturing germinated brown rice is provided to increase the total polyphenol content, ABTS radical scavenging activity, DPPH free radical scavenging activity and reducing power. CONSTITUTION: After brown rice is sterilized, the brown rice is germinated by soaking the brown rice at 20-30°C for 18-30 hours in dark condition. The germinated brown rice is irradiated with a light emitting diode (LED) at 15-20°C for 5-10 days. LED is one among far-red light, blue light or red light wavelength. The increase of antioxidant activity is the increase of total polyphenol content, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity, α-α-diphenyl-β-picrylhydrazyl (DPPH) free radical scavenging activity or reducing power.
