    Abstract: PURPOSE: Provided is a method of producing a flavoring agent which has an excellent beef flavor and shows a light color, while not generating a bitter taste. CONSTITUTION: A method of producing flavoring agent comprises the steps of: pulverizing beef, followed by adding 1-1.5 times of water thereto, boiling it at 70-75 deg.C for 1-4 hours; finely pulverizing the boiled beef powder and filtering the product with a filter of 40-100 meshes; spraying drying the filtered product at 170-185 deg.C; and filtering it to obtain fine beef powder having a size of 150-425 micro meters.
