Abstract: PURPOSE: Provided is a method for preparing a dropwort extract which has a high savory taste. The dropwort extract contains enough flavoring component from dropwort and has a high savory taste. CONSTITUTION: A method for preparing dropwort extract having high savory taste is characterized by (i) parboiling dropwort in boiled water and pulverizing it; adding cell wall decomposition enzyme thereto; filtering the decomposed solution; and concentration the filtrate; or (ii) parboiling dropwort in boiled water and pulverizing it; adding cell wall decomposition enzyme thereto; filtering the decomposed solution; concentrating the filtrate; and powdering the concentrate.
