Abstract:
PURPOSE: A microorganism Aeromonas sp. 96CJ10356 and a method for producing exopolysaccharide from the same are provided. Thereby, the exopolysaccharide which may be dissolved not in organic solvents but in water and which is useful as a coagulant and an emulsifying stabilizer can be produced. CONSTITUTION: The Aeromonas sp. 96CJ10356 is isolated and identified by the following steps: suspending samples obtained from the coasts of Cheju and Mara islands; spreading the suspended solution on ZoBell solid medium; incubating them at room temperature to isolate microorganisms having viscosity; inoculating the microorganisms into YMG liquid medium; incubating them with agitation of 120 rpm at 25deg.C for 7 days; centrifuging the fermented solution; adding ethanol into the supernatant to precipitate exopolysaccharides; collecting and drying the exopolysaccharides and measuring their weights; and selecting a microorganism, Aeromonas sp. 96CJ10356 producing the most amount of exopolysaccharide.
