Abstract: PURPOSE: A novel use of a germinated wheat extract and a method for preparing the extract are provided to significantly suppress sugar hydrolase, to reduce blood glucose, and to enhance the content of antioxidants and an antioxidative activity. CONSTITUTION: A method for preparing a germinated wheat extract comprises the steps of: soaking wheat in a solution containing sodium hypochlorite in the presence of light; germinating the soaked wheat for 24-48 hours while light is blocked; and collecting and drying the germinated wheat. The method further comprises the step of extracting the dried germinated wheat with hot water.
