PROBLEM TO BE SOLVED: To provide a microorganism usable in food production, and a nerve growth factor-like agent derived from natural products using the microorganism.SOLUTION: A microorganism usable in food production for producing nerve growth factor-like active components, Saccharomyces kluyveri strain, and a method for producing a nerve growth factor-like agent using the strain are provided. After the strain is cultured in an YM culture medium for yeasts, harvesting, adding ethanol, heating, extracting, and removing residues through centrifugation are carried out, whereby a yeast extract containing the nerve growth factor-like active components can be obtained.

PROBLEM TO BE SOLVED: To search a microorganism capable of efficiently producing a novel β-mannanase from an inexpensive raw material and establish a method for producing the enzyme by using the microorganism. SOLUTION: This β-mannanase acts on mannan, glucomannan, galactomannan and their oligosaccharides, produces mannoes, mannooligosaccharides, glucomannooligosaccharides and galactomannooligosaccharides by hydrolyzing their β-1,4-D-mannopyranosyl bonds, has 8.65 isoelectric point (by electrofocussing electrophoresis), 34 kDa molecular weight (by SDS-polyacrylamide gel electrophoresis) and an N-terminal amino acid sequence expressed by sequence No.1 in the sequence table. Bacillus polymyxa KT551 strain having a potency to produce the β-mannanase and a method for producing the aforesaid β-mannanase are provided.

PROBLEM TO BE SOLVED: To obtain the subject new protein comprising an antineoplastic protein having a specific molecular weight and derived from Aralia elata, abundant also in resource, exhibiting selective lethal action on tumor cells and useful for medicines, food additives, etc., as an antineoplastic agent, an apoptosis- inducing agent, etc. SOLUTION: This new antineoplastic protein is derived from Aralia elata and has about 36 kDa and about 33 kDa molecular weight of subunit by SDS electrophoresis and about 140 kDa molecular weight by concentration gradient gel electrophoresis and the protein is abundant also in resource and exhibits selective lethal action on tumor cells and is useful for medicines, food additives, food raw materials, etc., as an antineoplastic agent, an apoptosis-inducing agent, etc. The protein is obtained by bringing an extract obtained from Aralia elata by extraction with an aqueous solvent into contact with an anion exchange resin to carry out absorption treatment, successively eluting the adsorbate with an eluting agent from a column and purifying the eluate by gel electrophoresis, lectin column treatment, hydrophobic column treatment and gel filtration column treatment.

PROBLEM TO BE SOLVED: To provide a protein stably obtainable and having higher activity of selecting tumor cells than ever. SOLUTION: The antitumor protein derived from calluses of an Araliaceae plant, a method for producing the protein, and an antitumor agent containing the protein as an active ingredient are provided, respectively. The antitumor protein has higher selectivity on the tumor cells when compared with another protein derived from a plant body of the plant. Because the protein is derived from the calluses, the protein is stably obtainable all the year around, although the plant body is unstable as a source of supplying the protein due to its seasonability. PROBLEM TO BE SOLVED: To provide an aldose reductase inhibitor and an agent for removing active oxygen which are used for conventional foods or food materials and also ensure safety and almost free from side effects and further has extracts from agricultural and marine products as an effective component. SOLUTION: The aldose reductase inhibitor and the agent for removing active oxygen contain, as an effective component, at least one compound selected from the group consisting of methyl chlorogenate, quercetin-3-O- xylopyranosyl glucopyranoside, kaempferol-3-O-xylopyranosyl glucopyranoside, quercetin-3-O-glucopyranoside and quercetin-3-O-(6"-acetylglucopyranoside).
