Abstract: A device comprising two coaxially superposed outer tubes, wherein the innermost, first outer tube is disposed on the stuffing horn of a stuffing device for stuffing tubular casings with a fluid mass such as a sausage mixture. One of the two outer tubes is longitudinally displaceable with respect to the other outer tube. Pivotable elements fastened by pivotable mountings to the second outer tube and by pivotable joints to a connecting arm serve to deshirr and smooth the initially shirred tubular casing. Further, the elements press the tubular casing against the inner surface of an annular stop cylinder and thereby retard the withdrawal of the tubular casing from the shirred portion. The inner diameter of the stop cylinder is preferably smaller than the outer diameter of the deshirred portion of the tubular casing. A system comprising the aforesaid device, a tubular casing, the stuffing horn of a stuffing device, tying or clip devices and a cutting device is also disclosed.

Abstract: Flexible tubular packaging sheath consists of a cellulose hydrate hose contg. 25-70 wt.% liq., w.r.t. hose wt., and is coated, both externally and internally, with a continuous water vapour-impermeable polymer coating of addn. polymerised aliphatic cpds., contg. ethylenically unsaturated gps. in mol. Each coating copolymer pref. contains predominant amounts, esp. 60-92 wt.% vinylidene chloride and lesser quantities, e.g. 40-8 wt.% of at least 2 co-monomers such as acrylic acid, methacrylic acid, itaconic acid, acrylate and methacrylate ester and acrylonitrile. The packaging sheaths are used as synthetic broiling- or boiling sausage skins. The sausage skin can be filled with sausage compsn. without preliminary moistening and need not be processed immediately. Impermeability is maintained after ageing, e.g. 8 weeks at room temp. or 20 hrs. at 40 deg.C.

Abstract: A flexible casing consists of a cellulose hydrate tube carring (a) an uninterrupted coating, impermeable to water vapour, of a synthetic material from polymerised aliphatic ethylenic monomers, on the inside, and (b) a permeable layer of a synthetic material from polymerised aliphatic ethylenic monomers on the outside. The sausages are not sensitive to shock, e.g. during transport. The skin does not crack when the sausages are cut.

Flexible sheath use as a synthetic sausage skin is claimed, esp. for boiling and broiling sausage. Internal fat and gel deposition is prevented. Before filling, the sheath can be brought to optimum water-content, for further working.

Abstract: A device for deshirring, smoothing and braking a shirred tubular casing during stuffing of the casing with a fluid mass flowing under pressure from the stuffing horn of a stuffing machine into the tubular casing. The device comprises an annular body having a central opening releasably securable to the stuffing horn, said annular body having recesses on its outer surface extending parallel to its longitudinal axis. The recesses have a substantially U-shaped, V-shaped or rectangular cross-sectional configuration or end view configuration. The configuration of the braking and smoothing elements corresponds to that of the recesses in the surface of the annular body. The braking elements and/or the annular body are displaceable relative to each other either parallel to the longitudinal axis of the stuffing horn or the elements are displaceable perpendicular to the longitudinal axis of the stuffing horn so that the braking elements can be extended into the recesses or spaced away from the recesses. An apparatus comprising a device of the aforementioned type is also disclosed.
