    Abstract: A method for manufacturing a lipid, the method comprising culturing a transgenic organism obtained by introducing a gene coding for any one protein selected from (A) through (C) into a host, and causing the transgenic organism to produce the lipid. (A) A protein comprising the amino acid sequence represented by positions 128 through 287 of SEQ ID NO: 1, wherein glycine at position 203 and/or valine at position 204 of the amino acid sequence is replaced with tryptophan. (B) A protein comprising an amino acid sequence having 85% or higher identity with the amino acid sequence represented by positions 128 through 287 of SEQ ID NO: 1, wherein the amino acid in the position corresponding to position 203 and/or the amino acid in the position corresponding to position 204 of SEQ ID NO: 1 is replaced with trypotophan, the protein also having acyl-ACP thioesterase activity. (C) A protein having the amino acid sequence of protein (A) or (B) and having acyl-ACP thioesterase activity.
