    Abstract: A device and a method for cooling material exposes a material to a certain supply of cryogenic coolant using a conveying device. The configuration of the conveying device permits airtight packaging of the material and is designed according to a principle that is very similar to the paternoster conveying principle. The temperature in the device for cooling material can be set by metering devices for the cryogenic coolant. The airtight packaging of the material and the adjustable temperature setting provide an energy-efficient freezing unit with a small floor space requirement.

    Abstract: The process takes place in a container which rotates about an axis, and cooling of the meat during treatment is achieved by means of a liquid nitrogen supply pipe which enters the container along the axis of rotation. A rotary seal is provided between the pipe and the container wall, and the pipe is fitted with one or more spray nozzles inside the container. The nitrogen pipe (5) extends into the container (1) in the form of a spray arm (6) with sveral openings for delivering the nitrogen onto the meat (2). A vent (8) is provided and may be closed by a vlave (10). The container (1) is thermally insulated, and an infrared thermometer (4) provides an input to a device (13) which controls the flow of nitrogen from the tank (14). USE/ADVANTAGE - This invention is used in the treatment of meat, in which it is important to limit any temperature rise which may occur so as to avoid the growth of bacteria. A cooling means is provided which is effective and practical.
