Abstract: (A) Crystalline fructose (I) is prepd. from a (I) soln. as follows: (a) the soln. is cooled through an initial temp. range (T1) at a rate R1; (b) the soln. is further cooled through an intermediate temp. range (T2) at a rate R2 that is slower than R1; then (c) the soln. is cooled through a final temp. range (T3) at a rate R3 that is faster than R2. (B) The (I) stream is produced by: (a) fractionating a (I)/dextrose (II) stream to afford a stream contg. above 90% (I) (dry solids basis); (b) treating the (I) stream with activated C; and (c) crystallising (I) as above. (C) crystalline (I) is prepd. as follows: (a) (I) is crystd. in a stream to afford a mixt. of crystalline (I) and a (I)-contg. mother liq.; (b) crystd. (I) is sepd.; (c) at least some of the mother liq. is mixed with a liq. comprising H20 to give a lower solids soln. of (I); (d) the diluted mother liq. is contacted with activated C; and (e) the dil. soln. is evaporated to afford a higher solids soln. of (I).
