This invention relates to a preparation comprising a probiotic bacterial strain and a prebiotic mixture comprising 5-70 wt % of at least one N-acetylated oligosaccharide selected from the group comprising Ga1NAcα1,3Ga1β1,4G1c and Ga1β1,6Ga1NAcα1,3Ga1β1,4G1c, 20-95 wt % of at least one neutral oligosaccharide selected from the group comprising Ga1β1,6Ga1, Ga1β1,6Ga1β1,4G1c Ga1β1,6Ga1β1,6G1c, Ga1β1,3Ga1β1,3G1c, Ga1β1,3Ga1β1,4G1c, Ga1β 1,6Ga1β 1,6Ga1β 1,4GIc, Ga1β 1,6Ga1β 1,3Ga1β 1,4GIc Ga1β 1,3Ga1β 1,6Ga1β 1,4GIc and Ga1β1,3Ga1β1,3Ga1β1,4G1c and 2-50 wt % of at least one sialylated oligosaccharide selected from the group comprising NeuAcα2,3Ga1β1,4G1c and NeuAcα2,6Ga1β1,4G1c. The invention extends to food products comprising said preparation and to the use of the preparation in the prevention and treatment of infections.

Crystallization of glucose in compositions such as high fructose corn syrup or honey is reduced by adding as little as 0.25% by weight of inulin. The addition of inulin to honey reduces stickiness and increases the viscosity to allow the sweetener composition to retain its shape when molded. A honey and inulin composition can be added to chocolate without separation. A honey and inulin composition can be mixed with powdered milk without separation.

A nutritional composition is described for prevention or treatment of an immune condition. The composition includes at least vitamin E, vitamin C, vitamin B6, folic acid, vitamin B12, copper, zinc, selenium, fructo-oligosaccharides and/or gum acacia, a probiotic lactic acid bacterium. For example, in an embodiment it comprises per 300 g: 150 IU Vitamin E, 120 mg Vitamin C, 2 mg Vitamin B6, 400 ug Folic acid, 3.8 ug Vitamin B12, 1.5 mg Copper, 15 mg Zinc, 100 ug Selenium, 3 g Fructo-oligosaccharides and/or gum acacia, 10E10 cfu ST11 lactobacillus. Also disclosed are a method for making the nutritional composition, a method for manufacturing a functional food or medicament; and a method of prevention or treatment of an immune condition by administering an effective amount of the composition, functional food or medicament.

The present invention relates to a method for obtaining transgenic plants showing a modified fructan pattern as compared to non-transformed plants, comprising the steps of: a) preparing a DNA construct comprising one or more fructosyltransferase genes, or modified versions thereof, being operably linked to a promoter sequence active in plants and a terminator sequence active in plants; b) transforming a plant cell with the construct; and c) regenerating a transgenic plant from the transformed plant cell. Preferably, the 5' untranslated region of the fructosyltransferase gene is modified such that the expression of the fructosyltransferase is not negatively affected. The DNA construct may also comprise a targeting sequence upstream from the fructosyltransferase gene for directing the fructosyltransferase to a specific plant tissue or plant cell compartment. The fructosyltransferases produced in the transgenic plants change the fructan pattern of the plants, thus leading to different plant performance due to altered sink-source relations and yield, increased tolerance for drought, cold or other stresses, higher dry matter content, better taste and storability, and improved nutritional value. The plants are also suitable for use as raw material for fructan production.

Reduced-fat food dispersions containing an aqueous dispersion of sugar and an aggregate of microcrystalline cellulose and a gum selected from galactomannan gum, glucomannan gum and mixtures thereof exhibit the ability to set, have sugar bloom stability and mimic the rheology of full fat chocolate coatings. These dispersions are useful, for example, in food coatings, food inclusions and fudge. A method for setting of a high sugar content dispersion to a solid which solid is a soft or a firm solid at room temperature is also provided.

Branched fructo-oligosaccharides consisting of a chain which comprises mainly fructose units and has a preferred chain length of 2 to 15 units, on which are fixed one or more side chains mainly composed of fructose units. The length of the side chain, which may be straight or branched, is of 1 to 10 units. A composition consisting of one or more of the above mentioned branched fructo-oligosaccharides and, particularly, mixtures comprising, apart from the branched fructo-oligosaccharides, other ingredients such as proteins, lipids or fatty acids, carbohydrates, fibers and other additives, are also described.
