    Abstract: A method for processing fermented green tea leaf using ultra high pressure technology is provided to process fermented green tea leaf before a drying process in order to maintain the flavor of the fermented green tea and to secure high content of effective components. A method for processing fermented green tea leaf comprises the following steps of: fermenting green tea leaves; and treating the fermented green tea leaves under the condition of 200Mpa or greater and 60‹C or lower for 1-15 minutes and drying the treated green tea leaves. More preferably, the fermented green tea leaves are treated at 25~45‹C and 200-500Mpa. The fermented green tea leaf is selected from the group consisting of semi-fermented tea including Oolong tea, fermented tea including black tea and post-heating fermented tea including Puer tea.
