    Abstract: A lysozyme derived from Scallop(Patinopecten yessoensis) viscera is provided to actively inhibit growth of both gram-positive and gram-negative bacteria such as Escherichia coli and Vibrio vulnificus at relatively low temperature and low hydrogen concentration. A lysozyme is isolated and purified from Scallop(Patinopecten yessoensis) viscera through affinity chromatography and has characteristic properties of molecular weight of 14.3 kDa, optimal temperature of 20-30 deg.C, optimal pH of 5.0 and optimal stability pH of 5.0-6.0 and excellent antibacterial activity against gram-negative bacteria including Escherichia coli and Vibrio vulnificus.
