Abstract: The present invention relates to a Leuconostoc mesenteroides strain newly identified from kimchi, and more specifically, to a Leuconostoc mesenteroides Wikim009 strain derived from kimchi having excellent survival rates in intestines and an anti-inflammatory effect; and to a kimchi manufacturing method having an excellent taste and an effect of relieving intestinal inflammation by using the strains.

Abstract translation: 本发明涉及从泡菜新鉴定出的肠系肠道肠系膜菌菌株，更具体地说，涉及一种来源于泡菜的明串珠菌肠毒链霉菌Wikim009菌株，具有优良的肠存活率和抗炎作用; 以及通过使用菌株具有优异的味道和消除肠道炎症的作用的泡菜制造方法。
