Abstract: N-acetyl-D(L)-.alpha.-carboxylic acids are thermally racemized by melting them down, by adding a small amount of acetic anhydride to the melt and then heating them to a temperature being between the melting temperature and approximately 210.degree.C until the racemization is practically complete, whereupon the melt is chilled with an aqueous alkali metal hydroxide or ammonia solution. The residence time required for the complete racemization depends on the heating temperature of the melt such that the higher the heating temperature the shorter will be the residence time.

Abstract: The reaction mixtures which result from the enzymatic reaction of fumaric acid to produce L-malic acid contain L-malic acid and unreacted, fumaric acid as salts. For the production of pure solutions of Lmalic acid, the reaction mixtures are treated with cation exchangers at from 50 to 150.degree.C, and the eluates are filtered after being concentrated to an L-malic acid content of from 30 to 80% by weight. The pure L-malic acid is obtained by evaporating the solutions, optionally after a treatment with active carbon.
