    Abstract: A method and an apparatus for accelerating growth of lactic acid bacteria by applying electric field is provided to promote growth of the lactic acid bacteria, increase the number of the lactic acid bacteria and to increase production of metabolic products. In a method for accelerating growth of lactic acid bacteria by applying electric field, the growth of the lactic acid bacteria is promoted by applying an alternating current electric field or direct current electric field of 10V-1MV/m in frequency band of 1 kHz-1MHz at 37°C less. The lactic acid bacteria is lactobacillus species, streptococcus, bifidobacterium, leuconostoc, pediococcus or lactococcus. An apparatus for accelerating growth of lactic acid bacteria includes a container consisting of an insulator, two electrodes adhered to a floor side and a cover side and an electric field application unit connected to the two electrodes.
