Abstract: PURPOSE: A food preserving composition using gelatin extracted from the rockfish skin, and a producing method thereof are provided to offer functionalities of the gelatin to the composition by enzymatically hydrolyzing. CONSTITUTION: A producing method of a food preserving composition using gelatin extracted from the rockfish skin comprises the following steps: extracting the gelatin from the rockfish skin at 100-110 deg C for 65-75 minutes using a high-temperature pressurizing and extracting method; enzymatically hydrolyzing the gelatin using alcalase, flavourzyme, neutrase, or protamex ; and filtering the obtained hydrolysate with more than two kinds of membranes to obtain membrane fractions.

Abstract: 본발명은우럭껍질로부터추출한젤라틴을이용한식품보존용조성물및 이의제조방법에관한것으로서, 구체적으로본 발명은우럭껍질로부터추출한젤라틴을효소가수분해시킨가수분해물을포함하는식품보존용조성물을제공한다. 또한우럭껍질로부터젤라틴을추출하는단계; 및상기추출한젤라틴을효소가수분해시키는단계를포함하는우럭껍질로부터추출한젤라틴을이용한식품보존용조성물의제조방법및 상기방법을이용한식품저장방법을제공한다. 본발명에따른식품보존용조성물또는식품코팅용필름은항산화효과가우수하여수산물등의저장안정성을높여주며, 노화및 고혈압억제등의건강기능성을갖는다.
