Abstract:
PURPOSE: A production method of partial fermented tea using autumn persimmon leaves is provided to offer improved color, taste, flavor, and other functional properties. CONSTITUTION: Cut autumn persimmon leaves are withered in a half-shaded pace for 2-3 hours. Boiling water is mixed with salt, and the autumn persimmon leaves are parboiled with the mixture. The parboiled autumn persimmon leaves are dried at 60-80°C for 2-3 hours for removing moisture. The dried autumn persimmon leaves are roasted at 140-180°C for 3-20 minutes. The roasted autumn persimmon leaves are rolled for 3-7 minutes every 2 hours for 3 times until juice comes out. The rolled autumn persimmon leaves are inserted into an autoclave at 30-50°C after packing in a wetted cloth, and the autumn persimmon leaves is sweltered for 1-3 hours. The sweltered autumn persimmon leaves are rolled for 3-7 minutes. The rolled autumn persimmon leaves are dried at 60-80°C for 3-4 hours, and finally dried at 70-90°C for 30 minutes. The present invention relates to a method for preparing a natural antibacterial and antioxidant agent using bamboo leaves, and more specifically, to a method for preparing a natural antibacterial and antioxidant agent using a bamboo leaf extract, capable of increasing the extraction yield and improving the purity of antioxidant material by using bamboo leaves to prevent the loss of active ingredients in the bamboo leaves. The method for preparing a natural antibacterial and antioxidant agent using a bamboo leaf extract, comprises: a step of first soaking washed bamboo leaves in a mixture solution of water, acetic acid, citric acid, and salt for 12-24 hours; a step of first drying the first soaked bamboo leaves, and then spraying alcohol on the bamboo leaves, followed by second drying until the moisture content reaches 5%; a step of granule-pulverizing the dried bamboo leaves; a centrifugal thermal burning step of putting the granule-pulverized bamboo leaves in a centrifugal thermal burning machine, uniformly spraying alcohol thereon, performing low-rate rotation in a low-temperature condition, closing the thermal burning machine if the flavor begins to emit, and then performing high-rate rotation in a high-temperature condition; a step of putting the bamboo leaves, which have gone through the thermal burning step, in a mixture solution of water, alcohol, citric acid, salt, and vinegar, adding cellulase, lipase, vitamin, calcium, and magnesium thereto, followed by second soaking for 12-24 hours to perform enzymatic lysis; and a step of extracting active ingredients using a supercritical extraction method through separation by solubility.
