Abstract:
A thermostable amylase mutant is provided to increase the speed of cyclodextrin to the hydrolytic speed of maltooligosaccharide. A thermostable amylase mutant has an amino acid of the sequence number 2. A polynucleotide coding the thermostable amylase mutant has a sequence of the sequence number 1. A method for producing a maltooligosaccharide is to react the thermostable amylase mutant with cyclodextrin. The cyclodextrin is one or more selected from alpha-cyclodextrin, and beta-cyclodextrin and gamma-cyclodextrin. The maltooligosaccharide is one or more selected from a group of chain maltooligosaccharide of 6-8 glucose molecules.
