    Abstract: A pH dependent bacteriocin pulverulent body composition, and a method for inhibiting the post-acidification of yogurt by using the composition are provided to improve the inhibition of the post-acidification of yogurt. A pH dependent bacteriocin pulverulent body composition comprises the bacteriocin pulverulent body coated with an acid-soluble coating material. Preferably the acid-soluble coating material is selected from the group consisting of Eudragit, Sureteric and Compritol.
