    Abstract: A red pepper paste is spray-dried into powder. Thus, the red pepper paste is obtained from the mixture of 90 parts of saccharifying solution and 10 parts of red pepper powder. The resulting paste is blended with Na3Po4, NaCl, and water and homogenized at 1300-1500 rpm. The well-blended solution is spraydried at 160-175≦̸C and 9000- 14000 rpm, granulated to prevent caking, and cooled to 2-8≦̸C to give a final product.
