Abstract: PROBLEM TO BE SOLVED: To provide a method for producing the subject food product. SOLUTION: This method for producing stable dry powder comprises such steps as: A. a water-based dispersion is produced, B. the dispersion is converted to dry powder, and C. the dry powder is heated at 55-180 deg.C; wherein an alkali metal phosphate is used as inorganic salt (a3) to crosslink the protein to such an extent that, after putting the dry powder into hot water at 100 deg.C, the dry powder lies insoluble in the water for 3 min or longer.

Abstract: In the production of stable, hot water-insoluble dry powder by preparing a dispersion of 2-50 wt.% protein(s), 1-30 wt.% sugar(s), 0.2-20 wt.% inorganic salt(s) (I), 0.1-20 wt.% fat-soluble vitamin(s) and/or carotinoid(s) and 5-95 wt.% water, converting the dispersion to a dry powder and heating at 55-180 degrees C, alkali phosphate is used as (I) to harden the protein to such a degree that the dry powder is insoluble for NOTLESS 3 minutes after addition to water at 100 degrees C. An Independent claim is also included for the dry powder obtained.

Abstract: Procedimiento para la obtención de polvos secos estables, e insolubles en agua caliente, que contienen una o varias vitaminas liposolubles y/o uno o varios carotenoides, que comprende los siguientes pasos de procedimiento: A. Obtención de una dispersión acuosa que contiene: a1) un 2 a un 50 % en peso de al menos una proteína, a2) un 1 a un 30 % en peso de al menos un azúcar, a3) un 0, 2 a un 20 % en peso de al menos una sal inorgánica, a4) un 0, 1 a un 20 % en peso de al menos una vitamina liposoluble y/o al menos un carotenoide, a5) un 5 a un 95 % en peso de agua, referiéndose todos los datos de % en peso al peso total de la dispersión acuosa, y dando por resultado la suma de datos porcentuales de componentes aislados a1) a a5) un 100 %, B. Transformación de esta dispersión en un polvo seco, y C. calentamiento del polvo seco a una temperatura en el intervalo de 55ºC a 180ºC, caracterizado porque se emplea como sal inorgánica a3) fosfatos alcalinos, de modo que la proteína se retícula en este caso en tal medida que el polvo seco, tras introducción en agua de 100ºC, es insoluble en agua al menos durante 3 minutos.
