Abstract: of the disclosure Process for the continuous preparation of polyhydroxyfatty amides from N-alkylpolyhydroxyamines and alkyl esters of fatty acids In the process according to the invention, an N-alkyl-polyhydroxyamine, for example N-methylglucamine, is reacted with an alkyl ester of a fatty acid and in the presence of a basic catalyst. The reaction is carried out continuously in at least two, preferably in two or three, stirred tanks arranged in a cascade, under defined conditions in each stirred tank. Polyhydroxy-fatty amides, for example N-methyl fatty glucamides, are obtained continuously in high yield and purity with the process according to the invention.
