The reaction is carried out continuously in at least two, preferably in two or three, stirred tanks arranged in a cascade, under defined conditions in each stirred tank. Polyhydroxy-fatty amides, for example N-methyl fatty glucamides, are obtained continuously in high yield and purity with the process according to the invention.
