Abstract: PURPOSE:To obtain l-malic acid in high yield, by subjecting a culture solution of a fungus belonging to the genus Alcaligenes, capable of assimilating maleic acid, etc. to contact reaction with maleic acid or fumaric acid. CONSTITUTION:A culture solution of a fungus [preferably strain of Alcaligenes sp. T125(FERM-P 7323) or T501(FERM-P 7324)] belonging to the genys Alcaligenes, capable of assimilating maleic acid or a treated material of it is subjected to contact reaction with maleic acid or fumaric acid preferably at 6-9pH at 25-40 deg.C, to give l-malic acid enzymatically.
