Abstract:
본 발명은 발효피클 및 이의 제조 방법에 관한 것으로 좀더 자세하게는 피클에 발효 젖산균을 접종하여 발효피클을 제조하는 방법에 관한 것이다. 본 발명에 의한 발효피클은 젖산균의 생육으로 인하여 발효 시 야기되는 이상발효(abnormal fermentation)를 제어하며, 젖산발효로 인한 기호도 증진 및 프로바이오틱스(probiotics) 기능성을 부가할 수 있다.

PURPOSE: A method for enhancing the content of slime polysaccharides by fermenting Weissella sp. using xylitol as a carbon source is provided to ensure stable fermentation rate of a fermented food containing xylitol and physiological functionality and new physical properties of polysaccharides which produce lactic acid bacteria. CONSTITUTION: A method for enhancing the content of slime polysaccharides comprises a step of fermenting Weissella sp. using xylitol as a carbon source. Weissella sp. is selected from a group consisting of Weissella confusa, Weissella cibaria, Weissella koreensis, and Weissella paramesenteroides. A fermentation composition with enhanced slime polysaccharides is prepared by fermenting with Weissella sp. on xylitol. A method for a Kimchi composition with enhanced slime polysaccharides comprises a step of adding xylitol to Kimchi as a carbon source and fermenting Weissella sp.

Leuconostoc sp. includes Leuconostoc mesenteroides or Leuconostoc paramesenteroides. Leuconostoc sp. is selected from a group consisting of Leuconostoc sp. KACC 91673, KACC 91674, KACC 91675, and KACC 91676. A fermentation composition with increased polysaccharides is prepared by fermenting Leuconostoc sp. on xylitol. PURPOSE: A soybean-derived medium for fermenting lactic acid bacteria is provided to enhance activity of a fermentation starter and to ensure functionality of lactic acid bacteria probiotics and culture prebiotics. CONSTITUTION: A soybean-derived medium is used for fermenting lactic acid bacteria. The soybean is selected from a group consisting of white soybean, yellow soybean, green soybean, brown soybean, and eyebrow soybean. The soybean is prepared by removing the coat and germinating. The lactic acid bacteria are selected from a group consisting of Lb. farciminis, Lb. homohiochii, Lb. pentosus, Lb. plantarum, Leu. paramesenteroides, Leu. citreum and Leu. Lactis. A method for preparing the medium comprises: a step of removing the coat of the soybean; a step of germinating the soybean; a step of pulverizing and homogenizing the soybean; and a step of sterilizing the soybean.

본 발명은 산약을 이용한 식품 조성물 및 이의 제조 방법에 관한 것으로, 구체적으로 본 발명의 산약을 이용한 식품 조성물은 생산약, 산약 분말, 증자 산약 및 산약 발효물로 이루어진 군으로부터 선택된 단독 또는 이들의 혼합물을 포함한다. 본 발명의 산약을 이용한 식품 조성물은 산약 특유의 아린 맛을 개선하여 기호도를 상승시켜 산약의 소비 및 섭취를 증대시킬 수 있다.

CONSTITUTION: A pharmaceutical composition for preventing and treating obesity and lipid-related metabolic disorders contains 0.1-50 wt% of thienylbutyl isothiocyanate as an active ingredient. The composition is administered in 0.01-500 mg/kg. The composition is manufactured in the form of powder, granules, tablets, capsules, suspension, emulsion, syrup, oral administration, external use formulation, suppository, or sterilized injection solution. A health functional for preventing and relieving obesity and lipid-related metabolic diseases contains the thienyl butyl isothiocyanate as an active ingredient. The health functional food is manufactured in the form of capsules, tablets, granules, powder, or beverage.

본 발명은 혈류 개선용 조성물, 이의 제조 방법 및 이를 포함하는 건강기능식품에 관한 것으로, 구체적으로 본 발명의 혈류 개선용 조성물은 산약을 단백질 분해효소로 분해하여 생성된 효소 분해물로부터 분리된 분자량 100,000 dalton이하의 분획물을 포함한다. 본 발명의 혈류 개선용 조성물은 콜레스테롤의 합성을 저해하고 담즙산의 흡착 능력이 우수하여 혈중 콜레스테롤 농도를 저하시킴으로 혈류를 개선한다.

A recombinant vector contains the gene encoding the protein. A transformant is prepared by transforming with the recombinant vector. A microarray for diagnosing liver-related diseases contains the gene or an antibody to WS-H10M06630 protein.
