    Abstract: PURPOSE: A method for storing mushroom through modified atmosphere packaging(MAP) technology is provided to remove ethanol and acetaldehyde generated in storing the mushrooms using a deodorizing agent. CONSTITUTION: A method for storing mushroom through modified atmosphere packaging(MAP) technology comprises the following steps of: placing mushrooms in a container; and adding a deodorizing agent into the container and modifying a composition of the internal atmosphere with gas. The mushroom is oyster mushroom. The deodorizing agent is selected from the group consisting of Artemisia princeps, Artemisia capillaris flower, green tea, and activated carbon. The 2-5g deodorizing agent is used for the 100g mushroom. The deodorizing agent can be used as a form of powder or mixture of deodorizing agent and purified water at a ratio of 1:1.5-1:3 by weight.
