    Abstract: PURPOSE: A producing method of fermented fish paste using bamboo salt is provided to offer the abundant amount of minerals to the fermented fish paste compare to conventional fermented fish paste using regular salt. CONSTITUTION: A producing method of fish soybean paste using bamboo salt comprises the following steps: mixing Alaska pollack flesh with the bamboo salt; steaming the mixture for 5 minutes-3 hours, and crushing the mixture; and mixing the Alaska pollack flesh mixture with koji, and salt in a ratio of 1-20:20-1:1(w/w). The bamboo salt is obtained by inserting bay salt into a bamboo container, and sealing an opening of the container with yellow soil before roasting for 9 times using pine tree firewood.
