Abstract: The present invention relates to a method for microcapsulating β-carotene and a β-carotene microcapsule produced through the method, wherein the method comprises the steps of: (a) producing an emulsified liquid by adding and homogenizing β-carotene and an emulsifier in a chitosan solution; and (b) spraying and drying the emulsified liquid produced in the step (a).

Abstract: The present invention provides a pharmaceutical composition for preventing and treating cancer or inflammation, wherein the pharmaceutical composition contains any one selected from water-soluble chitosans having molecular weights of 8 kDa, 43 kDa, or 67 kDa as an active ingredient by inspecting anti-oxidation, anti-cancer, and anti-inflammation effects of each of the water-soluble chitosans according to the molecular weight.
