Abstract: A method of producing an ethanol extract of bamboo leaf by extracting bamboo leaf powder with ethanol is provided to obtain the ethanol extract of bamboo leaf powder with endurance exercise capacity and antifatigue effect. Bamboo leaf is washed, finely cut, steamed, dried and ground. The obtained bamboo leaf powder is mixed with 10 to 30 times their volume of ethanol, agitated at 200 to 300deg.C for 1 to 5hr and filtered. The supernatant is concentrated under reduced pressure and freeze-dried. A functional health food such as drinks, noodles, frozen food, processed milk products, processed meat products, special usage food, seasoned food, extraction processed food, uncooked food products and the like contains the ethanol extract of bamboo leaf powder.
