    Abstract: PROBLEM TO BE SOLVED: To eliminate an uneven temperature distribution of a packaged food by an edge effect. SOLUTION: This micro-wave heating and sterilizing method is carried out by radiating microwave against a packaged food F stored in a filling chamber 130 of a pressure container 1. This method is comprised of a food filling step P1 for filling the packaged food F in a filling chamber 130; a water filling step P2 for filling liquid of which amount does not satisfy an inner space under a state where the packaged food F is stored in the container; a container closing step P3 for sealingly closing the container; and a pressure setting step P4 for setting pressure in such a way that the inner space may have a predetermined high pressure. This method performs a microwave radiating step P5 in which microwave is radiated against the packaged food F through the container.

    Abstract: PURPOSE:To make it possible to apply the measuring method on manufacturing process for processed food and drink products without trouble by adding orthophenylenediamine for reaction after the addition of a buffer container to the food and drink, pH adjustment and deoxidation treatment, and shortening the measuring time of diacetyl. CONSTITUTION:For example, a part of tomato juice is sampled in the final stage of the manufacturing process of the tomato juice Briton-Robinson buffer or the like of 96ml is added into distilled initial boiling of 4ml, and the pH is adjusted to 5.0. Nitrogen gas is made to pass through this adjusting liquid. In the liquid wherein dissolved oxygen is removed, orthophenylenediamine is added so as to obtain the concentration of about 5ppm, and reaction is made to occur. The reacted liquid is supplied into differential pulse voltammetry, and the peak current value is read. The value is compared with the already formed calibration curve, and the diacetyl concentration is measured. Thus, the measurement up to the diacetyl concentration of about 0.08ppm can be performed. The reproducibility of the measured value is excellent, and the required measuring time can be shortened to about 1/4 or less.

    Abstract: PURPOSE:To efficiently and economically obtain concentrated tomato juice having favorable, characteristic fragrance by separating tomato juice by evaporation, concentrating the prepared primary concentrate in vacuum and concentrating the condensed solution through reverse osmosis. CONSTITUTION:Tomato juice is heated at preferably 40-90 deg.C, vapor corresponding to 10-15wt.% the tomato juice is separated by evaporation to give primary concentrate and condensed solution of the vapor. Then the primary concentrate is concentrated in vacuum preferably in one pass type in 1/3-1/4 to give secondary concentrate. Separately the condensed solution is concentrated by reverse osmosis, preferably the condensed solution is passed through a tubular or spiral semipermeable membrane under high pressure by circulation type and concentrated through reverse osmosis to give a concentrated aromatic solution and the concentrated aromatic solution is blended with the secondary concentrate.

    CONSTITUTION: A hood 2 is placed above nearly the middle part of an endless net conveyor 1, and plural stirring blades 3 are placed in the hood 2 opposite to each other interposing the conveyor therebetween. The hood 2 is connected with the electrical heater 4 and the fan 5 which are controlled with the controllers 6, 7. Hot air heated with the heater 4 at ≥300°C, preferably at 400W550°C is introduced into the hood 2 with the fan 5 at a flow rate of ≥3m/sec, preferably 4W 7m/sec, and is stirred with the blades 3 to form turbulent flow. The tomato A placed on the conveyor 1 is introduced into the hood 2 and brought into contact with hot turbulent air flow to effect the peeling of the skin. According to this method, continuous treatment can be carried out without requiring a pressure container, so this method is efficient and economical. Since no chemical is used, this method is free from problems of food sanitation and pollution. High-quality peeled tomatoes having flesh of inhibited excess softening and improved surface properties, especially required in tomatoes having weak and soft flesh originally and surface to be easily damaged, can be obtained.

SOLUTION: A treating object is aqueous solution containing at least one kind of hydrogen peroxide and peracetic acid. Then, after filling a platinum- carrying catalyst 2 in a flow type reactor, the treating liquid is passed in the apparatus by feeding the treating liquid into the apparatus. Thereby, the treating liquid is brought in contact with the catalyst 2. By this treatment, the hydrogen peroxide and the peracetic acid are considered to generate oxygen by respectively generating reactions and be degradated. As the flow type reactor, a fixed bed type catalyst reaction device generally suffices only by using that, and it is preferable to make the solution to be treated pass through a column 1 as an upward flow. In this case, a space velocity F of treating liquid to a catalyst layer volume W is 10 h or under.

The flow paths can be alternately switched by switch valves 2a, 2b. When the valves 2a, 3b are opened to one flow path 1a, the flow path 1a is connected to a transportation line and the liquid substance flowing in the line 1 is returned to the transportation line. The liquid substance containing air bubbles is sealed in the other flow path 1b as a sample liquid and provided to measure a content of air bubbles. A pressure-resistive storing part 3 is set to the flow paths 1a, 1b to press and supply a measurement gas to the sample liquid. The content of the gas can be continuously measured in-line by switching the flow paths.
