PURPOSE: A food additive composition, and a production suppression method of autoinducer-2 are provided to suppress the generation of bio-membranes and auto induction materials of pathogenic microorganisms. CONSTITUTION: A food additive composition contains a periplasmic extract originated from lactobacillus bifidus. The lactobacillus bifidus is bifidobacterium longum(ATCC 15707) or bifidobacterium adolescentis(ATCC 15706). A production suppression method of auto induction materials comprises a step of injecting the periplasmic extract originated from the lactobacillus bifidus to pathogenic microorganisms.

A pH dependent bacteriocin pulverulent body composition, and a method for inhibiting the post-acidification of yogurt by using the composition are provided to improve the inhibition of the post-acidification of yogurt. A pH dependent bacteriocin pulverulent body composition comprises the bacteriocin pulverulent body coated with an acid-soluble coating material. Preferably the acid-soluble coating material is selected from the group consisting of Eudragit, Sureteric and Compritol.
