본 발명은 (a) 유청분말, 저지방탈지분유, 글루코오스 또는 박토트립톤 중에서 선택된 1종, 글리세린 및 배지용액을 멸균 호화시킨 후 유산균을 부가하여 이를 균질화시켜 1차 코팅 물질을 제조하는 단계; (b) 상기에서 제조된 1차 코팅 물질에 정제 가공유와 폴리글리세린지방산 에스테르 및 글리세린호박산지방산 에스테르를 혼합 균질화시켜 2차 코팅 물질을 제조하는 단계; (c) 탄수화물, 단백질 성분 및 검류 증점제, 유화제를 혼합하여 호화 균질화시킨 후, 2차 코팅물질을 부가하여 균질시켜 3차 코팅 물질을 제조하여 멸균된 냉각수 속에 분무하는 단계를 포함하는 유산균 다중 마이크로캡슐 제조방법, 이 방법으로 제조된 마이크로캡슐, 이 마이크로캡슐을 포함하는 제품에 관한 것이다. 상기 방법으로 제조된 마이크로캡슐은 4℃에서 3개월 이상 유산균 생균수가 10 8 CFU/mL 이상으로 유지되는 작용효과를 나타낸다. Abstract:
A multi-microcapsule of lactic acid bacteria, a method for preparing the same, and a product comprising the same are provided to improve the dispersibility and the stability of the multi-microcapsule, and maintain a large quantity of lactic acid bacterial even during a long storage period. A first coating material is prepared by sterilizing and gelatinizing low-fat skimmed milk, glycerin, and a media solution, and homogenizing a mixture of lactic acid bacteria and the resultant material. A second coating material is prepared by mixing refined process oil, polyglycerol fatty acid ester, and glycerin succinylated fatty acid into the first coating material, and homogenizing the mixture. A third coating material is prepared by mixing, gelatinizing, and homogenizing carbohydrate, protein, germ type binder, and emulsifier, and homogenizing a mixture of the second coating material and the resultant material. The third coating material is sprayed in sterilized cool water.
Abstract:
A method of preparing a microcapsule having improved dispersibility and stability as compared with conventional technologies of capsules containing an unsaturated fatty acid, the microcapsule prepared by the method, and articles comprising the microcapsule are provided. A method of preparing a microcapsule containing an unsaturated fatty acid comprises the steps of: (a) mixing and gelatinizing polyglycerin fatty acid ester and one or more gums consisting of xanthan gum, guar gum and locust bean gum in sterilized water, adding an unsaturated fatty acid into the mixed and gelatinized solution, and homogenizing the mixed solution, thereby preparing a first coating material; (b) mixing and gelatinizing starch or modified starch, gelatin or casein, and polyglycerin fatty acid ester in sterilized water, injecting the first coating material into the mixed and gelatinized solution, and homogenizing the mixed solution, thereby preparing a second coating material; and (c) spraying the second coating material in sterilized cooling water. The unsaturated fatty acid is arachidonic acid, DHA(docosahexaenoic acid), EPA(Eicosapentaenoic acid), DPA(Docosapentaenoic acid), or CLA(conjugated linolenic acid).
