    Abstract: PURPOSE: A producing method of 5-hydroxymethyl-2-furaldehyde using garlic is provided to enable users to easily obtain the high purity 5-hydroxymethyl-2-furaldehyde with the high yield. CONSTITUTION: A producing method of 5-hydroxymethyl-2-furaldehyde using garlic comprises the following steps: high-temperature aging the garlic at 70-90 deg C for 15-40 days by sealing the garlic with a polyethylene film; hot-water extracting the aged garlic; filtering and concentrating the garlic hot-water extract; fractionating the concentrated garlic hot-water extract using ethyl acetate or butanol; separating and purifying the obtained fractions; and freeze-drying the fractions. The concentration of the garlic hot-water extract is processed by using a rotational vacuum concentrator. The fractionating process of the concentrated garlic hot-water extract is performed by using the high-performance liquid chromatography of the reverse-phase column chromatography method.

CONSTITUTION: A producing method of an garlic extract with the low content of 5-hydroxymethyl-2-furaldehyde comprises the following steps: aging garlic at 50-60 deg C for 15-35 days in the humidity of 70-90%; mixing the aged garlic with water in a water ratio of 1:3-5 before crushing; and refluxing and cooling the crushed mixture before extracting and filtering to obtain the extract. The aged garlic contains less than 1mg/g of 5-hydroxymethyl-2-furaldehyde, and more than 35%/g.DW of fructose.
