Abstract: The present invention relates to an Aspergillus fumigatus strain separated from microorganism fermented tea. In particular, the present invention relates to: an Aspergillus fumigatus strain which is separated from microorganism fermented tea and can apply functionalities, especially anti-obesity activities to the fermented tea produced by being fermented with the strain; a biocatalyst for producing microorganism fermented tea including one or more selected from the group consisting of the Aspergillus fumigatus strain separated from microorganism tea, a culture medium liquid of the strain, and a concentrated liquid of the culture medium liquid; and a method for producing microorganism fermented tea comprising a step of making a biocatalyst for producing the microorganism fermented tea reacted with tea tree leaves. Compared to reported existing microorganisms separated from microorganism fermented tea, the novel Aspergillus fumigatus strain separated from microorganism fermented tea of the present invention has improved various functionalities, particularly anti-obesity activities, so as to be used in producing high quality microorganism fermented tea.

Abstract: The present invention relates to a strain of Aspergillus sp. isolated from microorganism fermented tea, specifically, a strain of Aspergillus niger which is isolated from microorganism fermented tea and gives functional activities, specifically, anti-wrinkling activity, elastase inhibitory activity, whitening activity, and tyrosinase inhibitory activity, to fermented tea prepared by fermentation using the above strain; a cultured liquid of the strains; a bio-catalyst for preparing microorganism fermented tea, comprising at least one selected from a concentrate of the cultured liquid; and a method or producing microorganism fermented tea, comprising a step of reacting the bio-catalyst for preparing microorganism fermented tea with tea leaves. The novel strain of Aspergillus sp. isolated from the microorganism fermented tea has improved functional activities, specifically, anti-diabetic activity, anti-obesity activity, liver protecting activity, whitening activity, and anti-wrinkling activity, and thus can be used for the production of microorganism fermented tea having excellent quality.

Abstract: PURPOSE: A producing method of microorganism-fermented tea is provided to offer excellent functionality of the tea compare to a conventional producing method to users. CONSTITUTION: A producing method of microorganism-fermented tea comprises the following steps: colleting tea leaves from Camellia sinensis var. sinensis tea trees; heat-processing the tea leaves for inactivating enzymes inside the leaves; rolling and rubbing the tea leaves, and drying; adding water into the obtained rough tea to make the water content of 37-43wt%; and fermenting the rough tea at 42-48 deg. C for 35 days, by turning over the rough tea once every 5 days for 7 times.
