    Abstract: A yeast expressing cyclodextrin glucanotransferase and a method using the same are provided to improve the quality of starch food by restraining the aging of the starch material processed foodstuff. A yeast cell expression vector comprises cyclodextrin glucanotransferase gene, promoter, and delta sequence. The promoter is linked on the top of the cyclodextrin glucanotransferase gene. The delta sequence is an integration site to integrate the cyclodextrin glucanotransferase gene with the genome of the yeast. The cyclodextrin glucanotransferase is expressed on the cell surface of the yeast.

    Abstract: A heat resistance Sulfolobus solfataricus derived from alpha-glycosyl transferase and a basin cyclodextrin using the same is provided to be used in a medicine/food industry field by enlarging a usage of a beta-cyclodextrin in a medicine/food field. A glycosyltransferase which is polypeptide is originated from Sulfolobus solfataricus and has a transglycosylation activity binding a maltooligosaccharide at a ring configuration glucose of a basin cyclodextrin and an activity hydrolyzing a bond of the ring configuration glucose and a side chain substituted sugar. The glycosyltransferase which is polypeptide is made of an amino acid sequence of a sequence number 4.
