Abstract: Detoxification of mycotoxin contaminated vegetable harvest products, comprises treating the vegetable harvest products with a preparation (I), which is obtained by the reaction of at least one amine compound (II) or its salt, and sulfur dioxide or an oxygen acid or its salt derived from sulfur dioxide. Detoxification of mycotoxin contaminated vegetable harvest products, comprises treating the vegetable harvest products with a preparation (I), which is obtained by the reaction of at least one amine compound (A) of formula (NH2-R) (II) or its salt of formula ((NH3-R)+>X->) (III), and sulfur dioxide or an oxygen acid or its salt derived from sulfur dioxide. R : H or 1-4C alkyl; and X : anion of an organic or inorganic acid. An independent claim is included for the preparation obtained by the reaction of (A) or at least an oxygen acid or its salt derived from sulfur dioxide, which is sulfurous acid, peroxy monosulfuric acid, M1>HSO3, M1>HS2O5, (M1>)2SO3, (M1>)2S2O5, M2>SO3 or M2>S2O5. M1>alkali metal, preferably Na or K; and M2>alkaline earth metal.
