The invention relates to a method for modulating the taste of material compositions containing at least one high intensity sweetener HIS, said method being characterised in that at least two azo compounds are added, as taste modulators, to a material composition containing at least one HIS, in a total concentration of between 0.1 and 30 ppm or 0.1 and 30 mg/l.
