    Abstract: A composition capable of releasing active enzyme into an aqueous, active chlorine containing media which in a first aspect comprises an enzyme core encapsulated with an initial coating of a time-release substance, a first coating of a bleach-neutralizing substance and a second coating of a time-release substance. In a second aspect, the composition comprises an enzyme encapsulated in a time-release substance designed to delay release of the enzyme in dissolution for a first-time delay, and a bleach-neutralizing substance, present as either a core material and/or a first coating on a diluent core, which is encapsulated in a time-release substance designed to delay release of the bleach-neutralizing substance into solution for a second-time delay; the first-time delay being longer than the second-time delay so that the bleach-neutralizing substance will be, released and completely neutralize all active chlorine present in the solution before the enzyme is released. In a third aspect, the composition comprises an enzyme core encapsulated with a time-release substance, a diluent core encapsulated with a first coating of a bleachneutralizing substance and a second coating of a time-release substance, and a bleach-neutralizing substance core encapsulated with a time-release substance. The invention further includes a cleaning composition which is particularly effective in warewashing which comprises one of the encapsulated enzyme containing compositions described above, chlorine bleach, and at least one additional detergent component.

    Abstract: The present invention relates to compositions and methods employing a water soluble magnesium compound. In certain embodiments, the composition includes water and water soluble magnesium compound, but lacks other materials commonly used in cleaning compositions. The methods and compositions can provide magnesium ion at predefined ratios to calcium ion in water, such as magnesium ion in a molar amount equal to or in excess over a molar amount of calcium ion. A water soluble magnesium salt including an anion of a water soluble calcium salt is more effective than a magnesium salt with an anion of a water insoluble calcium salt. These compositions can be used for reducing lime scale or precipitate formation from hard water, removing soap scum, or the like.

    Abstract: A warewashing detergent composition is provided according to the invention. The warewashing detergent composition includes a cleaning agent, an alkaline source, and a corrosion inhibitor. The cleaning agent comprises a detersive amount of a surfactant. The alkaline source is provided in an amount effective to provide a use composition having a pH of at least about S. The corrosion inhibitor includes a source of aluminum ion and at least one of a source of calcium ion or a source of magnesium ion. The apparatus to create the ready-to-use products generally comprises a source of one or more concentrated products. These concentrated products are delivered to a point of use which typically may be a small, consumer-sized container. The apparatus dilutes the concentrated product to an appropriate level. The final, ready-to-use product can be a wide variety of cleaning products. The method provides for a larger profit to the retailer than normally available from the sale of pre-filled cleaning products.
